Food Fusion

                                       My plate of Kachori from Apollo Hospital Bangalore 


              Being in South India means you end up eating idli,dosa or wada everyday.Sight of a kachori in South India can be soothing for ones taste buds.I ordered my plate of kachori and filter coffee at the hospital canteen.A humble kachori packs in 200 calories!

           As I have nothing to do other than wait,I decided to analysis this picture of a kachori,filter coffee,tamrind and coconut chutney.The left side of the picture represent south Indian food and the right side represents the north Indian food.Kachori is a Indian cuisine which has its origins in North India.Kachori was popular snack in North India,before been overtaken by samosa which is a Persian import to India.

            Being in South India means that even a kachori will be served with coconut chutney.Drinking coffee is an Arabic tradition.400 years back while coming back from Mecca ,Baba Budan a Sufi saint brought seven coffee beans from coast of Yemen to India.Coffee was so elusive he had to hide those coffee beans during his travel.He planted them in Chikmangalur which is in present day karnataka. Since then filter coffee has become an indispensable part of South Indian cuisine.This is reason enough for me to visit Chikmangalur soon.

            This picture shows the North Indian tamarind chutney mixing with the coconut chutney adding sourness and sweetness to the coconut chutney.This is analogous to present day migration of North Indians to South India.Just like the tamarind chutney in the picture, area wise North India is bigger than South India.South India today has an aging population and the population will decline in coming years.South India needs people from North India to keep it's economic engine running in coming decades.
